University Town Center continues to grow, and another exciting dining destination is now on the horizon. BrickTop’s, an upscale restaurant known for its New American cuisine, is planning to open a new location near the intersection of University Parkway and North Cattlemen Road in 2027.
The restaurant will be located at 55 N. Cattlemen Road, near Target, adding another highly anticipated option to the already popular University Town Center dining scene. A sign along University Parkway is already letting residents and visitors know that BrickTop’s is coming soon.
The new Sarasota area location is expected to span approximately 7,500 square feet. BrickTop’s is currently targeting a mid to late summer opening in 2027, giving local food lovers something new to look forward to.
BrickTop’s offers a diverse menu with something for a wide range of tastes. Guests can expect New American cuisine featuring sushi, fresh seafood, steaks and sandwiches. The menu also includes popular starters such as deviled eggs topped with sugar bacon, grilled artichokes and tuna tartare.
Those who enjoy brunch will also have another reason to visit, as BrickTop’s offers brunch selections along with a variety of desserts for those looking to end their meal on a sweet note.
The company has already established a presence in Florida, with four restaurants currently operating throughout the state. Existing locations include Naples, Miramar Beach and two restaurants in the Palm Beach area. Another Florida location in Delray Beach is also expected to open in fall 2026.
BrickTop’s is headquartered in Nashville and has been serving guests since 2006. The restaurant was founded by experienced restaurateurs Joe Ledbetter and Tom Brunnberg, with the first location opening in Naples. A second restaurant followed shortly afterward in Nashville, helping launch what has become a growing collection of upscale dining destinations.
The arrival of BrickTop’s is just one part of the continued growth taking place around University Town Center. Several other restaurants and retailers are currently planned or under construction throughout the area.
Two popular Tampa restaurants, Olivia and On Swann, are also being developed along Cattlemen Road near Florida Blue. Both restaurants are expected to welcome guests in 2027, bringing even more exciting dining opportunities to the area.
The retail side of UTC is growing as well. West Elm and Ikea are among the businesses expected to open nearby, continuing the transformation of the University Parkway and Cattlemen Road corridor.
The area has also seen several notable restaurant openings recently. Blu Kouzina, a Greek restaurant located at 295 N. Cattlemen Road, began welcoming diners in March. Yugen, a unique Japanese hidden chef's counter concept located at 190 N. Cattlemen Road, opened earlier in February.
With more than 200 retailers and over 80 dining options already throughout the University Town Center district, the area has become one of the region's most active destinations for shopping, dining and entertainment.
As new restaurants, retailers and businesses continue to arrive, UTC is showing no signs of slowing down. The addition of BrickTop’s will give residents and visitors another upscale option to enjoy, while adding even more variety to one of the fastest growing commercial areas in Sarasota and Manatee counties.
